Description

This thick, hand-rolled, spaghetti-like pasta appears on nearly every menu in Southern Tuscany. Some popular dishes are: pici al’aglione (with a garlicky tomato sauce) and pici al cacio e pepe (cheese and pepper). I rolled this batch of pici with my farmer neighbors.
